Ingredients: Serves 6

100 g/4 oz unsalted (sweet) butter, softened
250 g/9 oz icing (confectioners') sugar
Finely grated rind and juice of 1 lemon

Method:

Beat together the butter and icing sugar until smooth. Beat in the lemon rind and juice. Spoon into a serving bowl and chill until ready to serve.
