Method:
Put the apple slices in cold water to
prevent browning. Whisk together the eggs and 225 g/8 oz/1 cup of the
sugar until thick and pale and the whisk leaves a trail when lifted
out of the mixture. Melt the margarine in a saucepan with the cider.
Bring to the boil and stir into the eggs and sugar. Sift the flour and
baking powder over the surface and fold in with a metal spoon. Pour
into a greased and floured roasting tin (pan). Lay the apple slices
attractively over.
Mix the remaining sugar with the ground cloves and sprinkle over. Bake
in a preheated oven at 200°C/400°F/gas mark 6 for about 40 minutes
until golden and the centre springs back when lightly pressed. Cut the
cake into squares and transfer to warmed serving plates. Serve with
Hot Lemon Sauce.
