2 eggs
250 g/9 oz/generous 1 cup caster (superfine) sugar
95 g/3.75 oz/scant 0.5 cup butter, plus extra for greasing
150 ml/0.25 pt milk
190g/6.5 oz/generous 1.5 cups plain (all-purpose) flour
15 ml/1 tbsp baking powder
6 pears, sliced

Method:
Beat the eggs and 225 g/8 oz/1 cup of
the sugar together until thick and pale. Melt the butter in the milk
and bring to the boil. Pour into the eggs and sugar. Sift the flour
and baking powder over the surface and fold in with a metal spoon.
Turn into a buttered roasting tin (pan). Arrange the pear slices over
and sprinkle with the remaining sugar. Bake in a preheated oven at
200°C/400°F/gas mark 6 for about 25 minutes or until risen and cooked
through. Serve warm, cut into squares, with Classic Custard Sauce.
